I am always into eating as healthy as possible and also Saving Money whenever I can. With that being said, I have been playing around with making my own granola bars to make them healthier with ingredients that I choose and also to avoid spending over $1.50 for each one. Here is Mr. Clark's Energy Bite Ingredients (feel free to adjust/change ingredients to your liking) 3 Cups of Rolled Oats 2 Tablespoons of Organic Peanut Butter 2 Tablespoons of Local Honey 1 Cup of Pitted Dates (helps with binding) 1 Cup of Walnut Halves 2 Tablespoons of Organic Dried Coconut 2 Tablespoons of Organic Chia Seeds 1 Tablespoons of Semi-Sweet/Dark Chocolate Few sprinkles of Cinnamon Makes about 20 Energy Bites (probably more, but somehow I started them small and they got bigger. I never said I was a top-notch chef) Directions Place the dry ingredients in a large bowl
Oatmeal Chia Seeds Coconut Cinnamon Microwave (30 seconds) Peanut Butter Honey Blend Up 1 Cup of Pitted Dates 1 Cup of Walnuts Combine and Mix All the ingredients listed above (dry, microwaved and blended-up ingredients) On cooking sheet, set up a piece of parchment paper and create your own Energy bites/granola bars. Place entire sheet in freezer so all the ingredients harden for a few hours. Take out and place in a container inside your fridge. Enjoy whenever you need an energy-boost!
